Some of the best dishes aren’t the most complicated ones. This Fire Roasted Pineapple with Tajin, Raspberry Sorbet, and Hot Honey uses just four ingredients, and every one of them is doing real work. It’s proof that when you understand contrast, elevated flavor doesn’t require a long ingredient list.
WHY THIS WORKS
The dish is built entirely around temperature and taste tension. The pineapple is charred until it caramelizes, bringing out a smoky sweetness you don’t get from raw fruit. Tajin adds salt, chili, and lime acidity. Hot honey brings sweetness and a slow-building heat. And the raspberry sorbet ties it all together with a cold, tart, fruity finish that melts into the warm pineapple as you eat.
Nothing here is hidden. Each bite hits sweet, smoky, spicy, and cold almost simultaneously, and that’s exactly the point. It’s a dish that works as a light dessert, a palate cleanser between courses, or even a bold starter at a summer dinner party.
RECIPE: FIRE ROASTED PINEAPPLE WITH RASPBERRY SORBETTO
INGREDIENTS
- 1 whole pineapple
- 4 tsp Tajin seasoning
- 2 Tbsp hot honey
- Raspberry Sorbetto
INSTRUCTIONS
- With a sharp knife, clean and core the pineapple.
- Divide it into two halves horizontally, then halve each half again, and again, to get 8 slices total. Pat the slices dry with a paper towel, then char them using a kitchen torch, fire roast, or grill.
- Place two slices of pineapple per person on a plate. Season sparingly with Tajin. Top with two quenelles of raspberry sorbet and finish with a drizzle of hot honey. Serve immediately.
This is the kind of dish that proves elevated doesn’t mean complicated. Four ingredients, one technique, and a scoop of the right sorbet can turn simple fruit into something that feels entirely new.
